Aubergine 49

Aubergine 49 was the most surprising fine dining we had found in Hoi An, Vietnam. 

The young chef, Nguyen Nhu Thinh who was formed by the great Japanese, Seiji Yamamoto in Tokyo, so when he came back to Vietnam, he decided to demonstrate his learning skills to Vietnamese and foreign customers in Hoi An. 

His cooking is French with an Asian touch, his set menu of three dishes was a delight as illustrated by his signature dish “Roasted and Pressed Aubergine” served with Da Lat buffalo Mozzarella. Each dish was perfectly cooked, presented and well balanced in terms of flavors 

As any fine dining venue, Aubergine 49 had a nice and affordable wines list. 

The service was impeccable, our waiter was helpful, friendly and he spoke particularly good English.  

Chef Thinh has an undeniable talent and for us, he deserves a restaurant in his image, which is to say, a classier and more elegant place. 

Aubergine 49 is on our list of the best restaurants in 2022.
