For our first gourmet restaurant in Seville, we selected Sobretablas, the restaurant of Camila Ferraro and Roberto Tetas.
Sobretablas could be described as quite unique in terms of architecture. It is housed in a building constructed in 1929 for the Ibero-American Exhibition in the Porvenir neighbourhood, it still preserves its original façade on the outside and has created different dining atmospheres including lounges with private spaces and a large terrace.
For our dinner on November 10, we selected the Sobretablas Deluxe tasting menu served in eight courses. From the “Bloody Mary “agrazpachado” and cursed sardine” to the “Cinnamon milk ice-cream with caramel of éclair”, three dishes standout for us were “Squid with a sauce made with garlic, onion, whisky and squid ink”: “Turbot with almonds gazpachuelo” and “Iberian suckling pig with prunes salad”.
The overall experience was great, the dishes were perfectly executed and presented, Camila Ferraro’s cooking was simple and precise in its construction and creation with distinguished and fine flavors and her dishes were both refreshing and inventive.
Roberto Tetas' wine list is superb as one would expect. Our choice is an excellent bottle of cava called Visol 2015 from the Mestres estate and a red wine from Cadiz, Taberner 2017 from Huerta de Albala.
The service is professional, sober, and fluid. The dishes arrive on time with a good rhythm.
Sobretablas is probably one of the best restaurants in Seville, Camila Ferraro and Roberto Tetas are extremely talented, each in their own field.
